Led by James Beard Award-nominated chef Oscar Diaz and the team behind Mezcalito, Aaktun is an all-day coffee shop, tiki bar, and restaurant concept with its original location in Durham. Shannon is committed to continually enhancing her skills and dedicates significant time to professional and personal growth. Outside of work, Shannon stays active by swimming and working out, enjoys cooking for her family, and loves attending local sporting events to cheer on her community.
