Al Pastor Pork Brown Rice Bowls Meal Prep

Prep Time: 15 minutes
Cook Time: 25 minutes
Ingredients
Protein: 1 ½ lb marinated al pastor pork
• 3 cups cooked brown rice (1 ½ cups uncooked)
• 3 cups fresh spinach (lightly chopped)
Instructions
1. Preheat air fryer to 375 °F.
2. Place marinated al pastor in a single layer.
3. Cook 12-14 minutes, shaking halfway, until edges caramelize and pork reaches an internal temperature of 145 °F, followed by a 3-minute rest.
4. Chop into bite-sized pieces.
5. Cook rice according to your preferred method.
6. Fluff with a fork and season lightly with salt and a squeeze of lime.
7. Toss raw spinach into warm rice to soften slightly.
For each meal-prep container:
1. Add ¾ cup brown rice.
2. Add ½ cup spinach.
3. Top with al pastor pork (about 4-6 oz).
4. Top with pineapple salsa.
Achiote Sauce
Serves 5
Prep Time: 15 minutes
Ingredients
• 1 ½ tsp salt
• 2 garlic cloves (peeled)
• 1 tsp cumin seeds
• 1 tsp black peppercorns
• ½ tsp whole allspice
• 1 tsp red chile powder
• ¼ tsp whole cloves
• ¼ tsp cinnamon powder
• 1 tsp Mexican oregano
• 1 ½ tbsp achiote paste
• Zest and juice of ½ orange
• Zest and juice of ½ grapefruit
• Juice of ½ lime
Instructions
1. Blend spices: Add cumin, peppercorns, allspice, cloves, oregano, garlic, and salt to a blender or mortar. Grind or pulse until coarse.
2. Add achiote paste and red chile powder.
3. Add orange juice and zest, grapefruit juice and zest, and lime juice.
4. Purée until smooth.
5. Add a splash of water if needed to loosen; season with more salt or citrus to taste.
Pineapple Salsa
Prep Time: 10 minutes
Ingredients
• 2 cups fresh pineapple (small dice)
• ½ red onion (small dice)
• 1 jalapeño (finely chopped)
• ¼ cup cilantro (chopped)
• Juice of 1 lime
• 1 tsp kosher salt 2 cups fresh pineapple (small dice)

Instructions
1. Combine pineapple, onion, jalapeño, and cilantro in a bowl.
2. Add lime juice and salt.
3. Toss to combine and adjust salt or lime as needed.
4. Chill 15-20 minutes before serving to let flavors bloom.
