Miso Soup With Thin Noodles
Ingredients
- 2 cups of water
- bunch of fresh spinach
- 1/2 of a block of firm tofu
- 8 shiitake mushrooms, cut up lengthwise
- 2 smalls chives, cut into squares
- 1 yellow onion, chopped up
- 1/2 package of a of Thai Kitchen thin rice noodles
- 1 ginger
- 1 parsnip, cut up
- 6 baby carrots, cut up
- 1 zucchini, cut up
- pinch of red pepper flakes
- pinch of ginger powder
Preparation
After the miso has been prepared, start adding the ingredients to the soup pot. It can be your preference.
Start with the onions and chives and then add the zucchini, parsnip, carrots, mushrooms and ginger.
Cover the pot and let cook on a low flame for 20-30 minutes, tasting as you go.
Add the tofu and pasta, allowing the pasta to cook for 8-10 minutes.
Taste the soup, add red pepper and turn off the flame when ready.
Place spinach on the bottom of the soup bowl.

Creamy Mashed Potatoes With Parsley
Ingredients
- 6 medium potatoes, about 2 1/2 pounds, peeled and diced
- 1/3 c. heavy cream
- 2 Tbs. cream cheese
- 1/3 c. butter
- 1/4 c. chopped parsley
- 2 tsp. salt, or to taste
- 1 tsp. pepper
Preparation
Fill a pot with water and bring to boil.
Add potatoes and reduce heat. Simmer 15 minutes or until potatoes are soft.
Drain.
Meanwhile, in a small pot over low heat, add the heavy cream, cream cheese and butter.
Heat to warm and stir to melt cream cheese.
Put potatoes through a potato ricer into a large bowl. If using a masher, mash just a few times.
Add cream to potato mixture and mix or mash to make smooth.
Add parsley, salt and pepper and stir just to incorporate.
Serve.

Chocolatey Overnight Oats With Strawberries
Ingredients
- 1 tsp agave nectar (or honey)
- 1/3 cup almond milk
- 1/2 Tbsp chia seeds
- 1 Tbsp cocoa powder
- 1/2 cup non-fat Greek yogurt
- 1/3 cup oatmeal
- 3 large strawberries, sliced
Preparation
Mix all the ingredients, except for the strawberries.
Place a bit of the oatmeal batter into a jar or other airtight container.
Add slices of strawberries on top.
Add another layer of oatmeal batter and strawberries.
Top with the remaining oatmeal batter.
Put it in the refrigerator overnight.

Fluffy cheesecake and topped with whipped cream! 🍰🧀🥛
Mini Nutella Cheesecakes
Ingredients
- 18 chocolate graham crackers
- 1 stick of butter , melted
- 1 13oz. jar Nutella
- 1 8oz. container of Cool Whip, thawed in the refrigerator
- 1 8oz. box of cream cheese , softened
Preparation
In advance, thaw your cool whip in the refrigerator.
Preheat the oven to 350F degrees.
Place the chocolate graham crackers in a food processor and pulse until they are fine crumbs.
Add the melted butter to the food processor and pulse again until the butter is combined with the cracker crumbs.
Line a small 24-cup muffin tin with cupcake liners.
Using a very small ice cream scoop, place a scoop of the buttery crumbs into each cupcake liner.
Using the same ice cream scoop, turn it over and press the crackers into the bottom of each liner.
Bake for 10 minutes.
Cool completed before adding filling.
Add cream cheese and Nutella to a large bowl and mix using a hand mixer.
Once the cream cheese and Nutella are completely mixed, fold in the thawed cool whip.
Using the small ice cream scoop again, place one scoop of filling on top of each of the baked cracker crusts. Freeze for 3-4 hours.
Serve right from the freezer.
