4 CHEESE MACARONI AND CHEESE

Ingredients:
1 lb. elbow macaroni
Béchamel Base
4 tbsp unsalted butter
3 tbsp flour
2 cups whole milk
1 cup evaporated milk
1 tsp Dijon mustard
½ tsp garlic powder
½ tsp salt
½ tsp pepper
Cheese
8 oz sharp cheddar, shredded
4 oz Monterey Jack or Gruyère, shredded
2–3 oz American cheese
Topping
1 cup panko breadcrumbs
2 tbsp melted butter
¼ cup Parmesan (optional)

Instructions:
Cook pasta in salted water, 2 minutes under al dente. Drain.
To make béchamel:
Melt butter and whisk in flour (1–2 min).
Slowly whisk in milk + evaporated milk. Cook until slightly thickened and smooth.

To season: add Dijon, garlic powder, salt, and pepper.
Add cheeses off heat.
Stir in cheeses until smooth.
Combine pasta with sauce.
Transfer to buttered baking dish.
To make topping, mix breadcrumbs with melted butter & Parmesan. Sprinkle on top!
