Three Bites

If you’ve been in recently, you’ve noticed we swapped out our savory pastry for something new! I’ve been wanting to do something with fennel for a good long while, and this pastry is inspired by a simple dish my nonna made one when I went to visit her one weekend while I was teaching English abroad in Italy.

All she did was roast some fennel with some stracchino cheese in the oven, and it was one of the most amazing things I’ve ever had. So simple, and still so delicious. I wanted to find a way to honor her with the same, delicious simplicity. While the original version had stracchino, it just became too unreliable to get, so we now use stracciatella instead! Cheese base, roasted fennel on top, and then drizzled with our version of cool honey (because hot honey is everywhere! So we wanted to change it up). Still simple, still absolutely delicious. (Oh yea. Our cool honey is infused with lemongrass, ginger, mint, and lime 🤤)
