I thought I’d share a little story this Mother’s Day about one of the craziest shifts I ever worked in the restaurant business and I still remember to this day

Gr**go Chicken Queso Casserole
Ingredients:
* 2 lbs ground chicken
* 1 can diced tomatoes w/ chilies
* 1 can diced green chiles
* 1 tbsp taco seasoning
* 1 tbsp ranch seasoning
* 1 cup cooked white rice
* 1 jar chili con queso dip
Instructions:
1. In a large pan, brown the ground chicken and season with taco seasoning and ranch seasoning.
2. When the meat is about ¾ cooked, add in the diced tomatoes with chilies and green chiles.
3. Continue cooking until the liquid has reduced by about half.
4. Stir in the cooked white rice and mix well.
5. Once most of the liquid has been absorbed by the rice, pour in the queso dip and stir until everything is fully combined and creamy.
6. Serve with hard or soft tortillas and load it up with your favorite taco toppings 🌯🔥
