FatAss Cheesecakes

Officially on the menu for my vegan friends and more specifically for my friends that have dairy allergies, my carrot cake cheesecake has successfully been made and tested with 100% dairy free and vegan friendly. Be advised, it does however contain nuts.

Fa**ss Cheesecakes weekend of creation! Here is the first attempt at a pineapple upside down cheesecake. It is a top and bottom layer of super moist pineapple upside down cake with a subtle layer of pineapple cheesecake. Outer edge has a whipped cream frosting.

Okay, after three attempts I have finally got the cook time and temp down. Next step is a taste test by Thel and Malia Bradford and then the carrot cake cheesecake will be added to the menu. It is finished with a cream cheese icing and candied pecans on top.
