Roasted Pork Tenderloin with Texas Gold Orange Marmalade & Roasted Root Vegetables with Maple & Chili Spiced Pecan Crumble with fresh thyme.

The pork tenderloin is seasoned with a combination of Smokey Apple Pork Rub and Roasted Garlic Butter Seasoning. I mixed 50/50 Texas Gold BBQ Sauce and orange marmalade for the sauce/glaze. The combo worked out perfect. The vegetables are a mixture of butternut squash, carrot, golden beets, red beets, and red onion. I seasoned those with some Smokey Apple Pork Rub, Side Chick Chicken Rub, and Roasted Garlic Butter, touch of sugar, dash of apple cider vinegar, and some olive oil. The pecan topping is pecans, maple syrup, & Texas Red Chili Seasoning. Even though I'm not a huge fan of thyme, a sprinkle of some fresh thyme leaves was really awesome on the vegetables and pork!

The pecan mixture is baked for 8 minutes at 375, stirred, and baked for another 6 minutes or so. Let cool and then crumble or chop. The pork and vegetables were roasted at 450. Pork took about 18-20 minutes. Vegetables took about 30. This is an easy recipe that anyone can do and it's fairly quick to prep and cook.
