Gwinnett County has made us hire a septic engineer for Barn to have one bathroom and a very small on farm processing center. I never even knew there was a septic engineer. At least Larry is pretty cool laid-back kinda like a turkey or Scooby-Doo the stoner of the farm.

What do you do when you have 9 pounds of tasty cherry tomatoes that local community is not gonna buy before they hid bad. Time for roasted garlic bruschetta yes 9 pounds and then mason jar gave us 8 pints. Oh so yummy. We will be enjoying this with some toasted sourdough bread.

Large Black pigs (also called Large Black hogs) are a British heritage breed developed in the late 1800s from black pigs in Devon/Cornwall and East Anglia, with some Chinese influence. They became one of England’s most popular breeds by the early 1900s for pasture-based pork and bacon production due to their hardiness, foraging ability, and docile temperament. 
Numbers declined sharply after WWII with the rise of intensive indoor farming (they thrive outdoors), leading to “critical” endangered status, though interest has revived for pasture-raised systems. 
Meat Quality
Large Blacks produce exceptional, flavorful pork prized for its “old-world” taste, tenderness, and succulence. Key traits:
• Darker red meat with shorter muscle fibers → notably tender.
• Micro-marbled fat throughout (self-basting when cooked) → keeps it moist and juicy without excess lard.
• Excellent for bacon, roasts, charcuterie, sausages, and traditional cuts; higher meat-to-fat ratio as a “bacon-type” breed.
• Pasture-raised animals yield the best results—rich, deep flavor from foraging (avoid stress for optimal quality). 
They’re slower-growing than commercial breeds but well-suited for small farms , offering superior eating quality over mass-produced pork. Great choice for direct sales or home use!

Peking duck breast prosciutto my first attempt came out fantastic. It’s been hanging in the fridge for about eight days. I’m gonna give it another week but consumed one as a taste test. We still have three more breast hanging and we did two chickens just as an chicken breast prosciutto just as an experiment to see how that turns out

My first sample round of Peking duck breast prosciutto . 2-weeks. It’s wonderful little on the salty side. I think it still needs to drop some weight and Harden enough. It’s a little too tender. We’re going for three weeks for the rest of it .

We are preparing our next bacon smoke w our own pasture, raised pork, Midlands and black Angus pasture, raised brisket for beef, bacon and pork bacon. They will cure and honey salt and seasonings for a week and then slow smoke. . And I tell you you’ve never tasted bacon like this .
