We’ve been going to since May of 2022, which still feels a little unreal to say out loud. It honestly baffles me that I was the one who wrote the very first article about them. Time has a funny way of sneaking up on you when a place quietly becomes part of your rhythm.

Recently, and I were talking after I commented again on a post about them needing a cook. He joked, “At this point, I may just hire you.” I reminded him quickly that I possess exactly zero cooking skills and would contribute nothing beyond poorly timed and often inappropriate jokes. Hard pass.

But what he did share stuck with me. Their location continues to be a challenge when it comes to finding passionate cooks. Denton. And I get it. If this place were in Dallas or Fort Worth, he’d probably be batting people away. Add a commute into the equation and suddenly people hesitate. I mean, I drive two to three hours round trip, at least once a quarter, just to eat there and I’d go more often if life allowed. But, yeah, it’s a far drive.

What I think gets lost on someone looking is the why. This isn’t just another cook position. It’s a role inside something genuinely special. Ben has been our server since day one, and on one lucky visit we were taken care of by . In this industry, building something that keeps people around that long is rare. That kind of consistency doesn’t happen by accident.

Sure, you can find great food in Dallas or Fort Worth, plenty of it. No disrespect there. But not many places leave a feeling behind. Not many have a heartbeat. Not many linger with you long after the plate is cleared. Osteria does.

So if you’re a cook, or you know one, looking for a place to grow, to belong, and to spend real time with, my advice is simple: go eat there. Sit down. Have the experience firsthand. Let the room, the food, the people do the talking.

Then make your decision.
