Tipsy Noodles
Makes 4 Servings
Total Time: 35 Minutes
Dietary: Gluten-Free Dairy-Free
½ cup coconut aminos
2 tablespoons rice vinegar
1 tablespoon fish sauce
1 teaspoon toasted sesame oil
2 teaspoons coconut sugar
4 garlic cloves, minced
1 teaspoon freshly grated ginger
1-4 Thai chiles, minced
1/3 cup low-sodium beef broth
1 teaspoon tapioca or arrowroot flour
1 tablespoon avocado oil
1 pound ground beef (90/10)
1 small red bell pepper, seeded and thinly sliced
4 green onions, cut into 2-inch pieces
1 cup matchstick-cut carrots
9 ounces wide rice noodles
Kosher salt
2 tablespoons freshly squeezed lime juice (about 1 lime)
1 cup packed Thai or regular basil leaves, plus more for garnish

It’s a frozen espresso martini summer ☕️☀️
This frosty cocktail gets the perfect dairy-free finish with Unsweetened almond milk. Frozen Espresso Martini:
✨ 2 cups cooled espresso (or cold brew concentrate)
✨ ½ cup vodka
✨ ⅓ cup coffee liqueur
✨ ¼ cup simple syrup
✨ 1 cup MALK Unsweetened Almond Milk
Pour all ingredients into a Ninja Slushi or frozen beverage machine and let freeze. Click ‘Slush Assist’ and let it do its thing!
Using a blender instead? Freeze your espresso or cold brew concentrate in an ice cube tray first. Once frozen, add the espresso ice cubes and remaining ingredients to a blender and blend until smooth. Add a splash more MALK to thin if needed.
