Modern Nicoise Salad. Grilled ahi tuna, cucumber wrapped romaine, haricot vert, grape tomato, red radish, nicoise olive and pomme frites tossed in lemon white wine cream. Tasty petite classic from dining with the Chef at the Dayton Racquet Club 2016.

Smoked paprika pan seared Muscovy duck breast, herbed saffron rice, solfrino carrots with dried blueberry Zinfandel reduction. Flavors of fall come together with hints of smoke, perfume, dried fruit and richness. A dish that is from my beginning days at the Dayton Racquet Club.

Saturday night movie food nibbles! GF Parmesan cheese spoons filled with roasted garlic aioli and goat cheese mousse and topped with beet micro greens. Creamy, crisp, rich, filling, oh so delicious!

Rainy days and Ahi Tuna! Peppercorn encrusted and grilled with Ratatouille Basmati Rice, Red Wine Beurre Rouge and Chives. Rich in warmth and makes it all sunny!
