2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
Salt & pepper to taste
1/2 cup plain Greek yogurt or vegan yogurt
1/4 cup pomegranate arils
2 tbsp chopped pecans (optional)
Fresh thyme or parsley for garnish

🥄 Instructions:
Preheat your oven to 400°F (200°C).
Toss sweet potato slices with olive oil, salt, and pepper. Arrange on a baking sheet in a single layer.
