Nevres Sehic, Gateway Market Wine & Beer Director, selected sparkling wines from around the world to pair alongside dishes from Orchestrate's Chef Tom McKern and our Gateway catering team.

Last night many members of our Orchestrate Hospitality team attended the 2023 Iowa Restaurant Association Culinary Affair! Orchestrate had a total of three chefs included in the seven course dinner.

Chef Michael Kolodzej (Executive Chef at CentroDSM) prepared the Soup course. He served Wellfleet Oyster Chowder made with bacon, yukon potato, leek, vermouth, Lola's Hot jalapeño serrano, and A Buttermilk Fried Oyster.

Chef Kate Cobb (Pastry Chef at Gateway Market & Cafe) prepared the Intermezzo course. She served Lemon Posset made with a blueberry dust, thyme and a toasted oat shortbread crumble

Chef Alex Gabrielson (Executive Chef at Liberty Street Kitchen) prepared the Entrée. He served Sakura Farms Pork Short Rib with a homemade biscotti, seared brussels sprouts, pickled red cabbage, Boetje's mustard with a parmesan cream sauce
