Feeding the crew before feeding the crowd.
Sometimes the best meals are the simple ones — especially during the holidays.
Today’s prime rib was for the crew and myself. Nothing fancy, just done right.
🥩 Simple Prime Rib Recipe:
Seasoned with SPG (salt, pepper, garlic).
Smoked low and slow (225 F) until rich and juicy.
Rested properly. Sliced & shared with good people.
That’s it. No shortcuts. No stress. Just good meat and a little smoke — the way it’s always been done.

For those who question a Latino’s fidelity or don’t see us as Americans, I humbly remind you that Latinos have been fighting and dying for this country for decades. Not to mention the ones that were promised their citizenship if they served. Which so many immigrants willfully did. These World War Two recruiting posters are proof that we love this country as much as you do. I just got these in and am going to put them up in my shop. Food for thought. Cheers!!
