Everything is truly better with an egg on it! I made avocado sweet potato toast this morning during John Luke’s nap time and topped it with the most perfect jammy eggs🤤‼️ Details below ⬇️⁣

Sweet potato toast:⁣
- cut the sweet potato into even slices around 1/4 to 1/2-inch thick. ⁣
- Lightly coat with an oil of your choice- i like to use avocado oil, coconut oil, ghee, or tallow. Then season with salt. ⁣
- Roast or air fry at 400 degrees. Time depends on method! But anywhere from 10-30 minutes flipping halfway through

For jammy eggs:⁣
- fill up a sauce pan with water and bring to a gentle boil⁣
- Slowly add in your eggs⁣
- Cook for 6 1/2 - 7 minutes⁣
- While eggs are cooking, prepare your ice bath for the eggs⁣
- Once eggs are done, add into the ice bath⁣
- Wait a couple minutes- I normally do 3-4 minutes⁣
- Crack and peel the eggs⁣
- Slice open and ENJOY that PERFECT yolk! ⁣

Assemble: ⁣
- Add avocado onto your sweet potato toast. Then sprinkle on EBTB seasoning and top with your jammy eggs! ⁣

We’re moving to TEXAS 🤠‼️ After almost a decade in California, we’re packing up and heading back home to Houston! I honestly never really thought we would move back but life works in mysterious ways! While I’m sad to leave California and the life we have here behind, I’m excited to be closer to our family and friends 🥰 and pursue new opportunities! Please check on me in the summer 😅 I’m not going to be okay 😂🔥☀️!!

🍫🥥Almond Joy // Mounds Date Bark🥥🍫⁣
Y’all know I LOVE dates so I had to make my own version of the viral date bark!! One of my fav combos (besides dates dipped in tahini 😋) is dates stuffed with coconut butter so I went with an almond joy/mounds like filling and damn it did not disappoint!⁣
⁣
- 16 dates (pitted)⁣
- 1/3th cup coconut butter @artisananaturals
- 1/3th cup shredded coconut ⁣
- 1/2 tsp vanilla⁣
- 1/4th cup slivered or chopped almonds (optional)⁣
- 1/2 cup chocolate chips @hukitchen
- 1 tsp coconut oil⁣
- Flakey sea salt⁣
⁣
First line a sheet tray (that will fit in the freezer) with parchment paper. Then gently split open your dates and lay them flat on the tray. Slightly overlap them and press down so they stick together more easily. I did four rows of four dates. ⁣
⁣
Then make your coconut butter filling. Melt your coconut butter then add in the shredded coconut and vanilla extract. Mixture together and then add in an even layer on top of your dates. Next sprinkle over top your almonds (omit if doing a mounds version or nut free). Melt the chocolate chips with a little bit of coconut oil and drizzle over the bark! Top with some flakey sea salt and place in the freezer to set for 30 minutes to an hour! ENJOY! I like to keep these in the freezer! ⁣
