My Italian Beef Meatloaf
This meatloaf will feed 6-8 people or make it and save the leftovers for the best meatloaf sandwich you’ve ever had.
You'll need-
•2-lbs 80/20 ground chuck
•1/2-cup of minced onion
•2-garlic cloves minced
•1/2-cup minced celery
•1/4-cup minced carrot
•1/2-tsp dry rosemary
•1/4-cup red wine
•1/2-cup grated pecorino romano
•1-tsp salt
•2-tbs tomato paste
•1-large egg
•1/2-cup bread crumbs
•2-tbs butter
Topping mix together-
•4-tbs tomato paste
•2-tbs brown sugar
•2-tbs red wine or balsamic vinegar

1-add the butter to a skillet put the heat to medium when it begins to bubble add the onion, celery, carrots, garlic and sauté this for 10 minutes. Remove to a plate place in the fridge to cool
2-when the vegetables are cool add them to a large bowl with the balance of the meatloaf ingredients (except the topping) mix well by hand.
3-form into a loaf place on a baking sheet lined with parchment paper.
4-Place in a 375 degree pre heated oven at 30 minutes spread the topping on continue to bake for an additional 30 minutes or until done. Done would be when a meat themometer registers an internal temperature of 160 degrees.
5-Allow the meatloaf to rest for 10 minutes before enjoying

Leftovers are delicious too, make a meatloaf sandwich just add a little butter to a non stick skillet and fry up a couple slices and serve on your favorite bread.
