Papaya Salad

1 American football sized green papaya, peeled, seeded and shredded.
2 carrots peeled and shredded.
3 spring onions chopped almost all the way up the green.
2 large tomatoes, chopped.
Chilies, depending on how much heat you like.
Mix it up.
Dressing:
4 T fish sauce
juice from 6 limes
4-5 garlic cloves minced, and sugar.
You adjust it to your own taste and balance of flavors. Pour it over and mix well. Top with chopped salted peanuts.
