Try this grain free granola:
6 cups unsweetened coconut strips or shreds
2 cups dried fruit such as raisins, mango, unsweetened cherries, apples(torn), blueberries, etc. I like to use a combination.
1/2 cup raw local honey or 100% pure maple syrup
Cinnamon (to your taste)
Pumpkin pie spice (to your taste)
1-2 cups Hu chocolate chips or hunks
Cacao nibs (to your taste)
2 tsp pure vanilla extract
Mix all ingredients except except chocolate chips. Bake on a greased (I use coconut oil) at 350 degrees for 10 minutes. Stir and bake 5-10 more minutes. I like to bake for 10 more because I like mine really crunchy!
Once completely cooled, add chocolate chips. Store in airtight container for up to 3 weeks. If stored in fridge or freezer, it will last much longer.
*This recipe can easily be switched up to your liking. I have added nut butters (almond, sun butter, macadamia nut, etc), nuts and seeds, etc.
