Voted the #1 restaurant in Fredericksburg, Texas by Trip Advisor. Dinner at the Cabernet Grill was unforgettable. We kicked things off with Texas twinkies that hit every smoky, spicy, creamy note. This carrot soup was silky and over-the-top flavor, and those biscuits were dangerously good. The ribeye was a perfectly cooked medium rare, broiled at 1800°F, paired with three cheese grits. The grits were velvety and rich with just the right amount of cheese. We didn't even have room for dessert. A bottle of Cab Blanc wine from Grape Creek Vineyard tied it all together beautifully. Hill Country dining at its best!
What makes these species unique is that fishermen can remove one claw and they regenerate it through molting, a process that typically takes one to three years.
Here’s how it works:
Fishermen use baited traps with pigs feet or fish heads to catch the crabs.
Only legal-sized claws can be taken.
One claw is twisted off carefully at a natural breaking point.
The crab is returned to the water so it can survive and eventually regrow the claw over time.
This method is considered more sustainable than harvesting the whole crab because the crab can continue living and reproducing.
Stone crab claws are expensive because they’re considered a specialty seafood and there’s a lot of work behind a relatively small amount of meat.
Limited season from Oct 15- May 1st.
Labor intensive — traps have to be checked constantly, claws sorted by legal size, and crabs handled carefully.

We came out to fish… but they had other plans—and honestly, we didn’t mind one bit. Watching them feed just feet away was better than anything we could’ve caught.
