One of the things I love processing our meat here at home is that I can tell a lot about the health of our herd just by looking at their insides.
This buckling was processed the other day so that we had one less mouth to bring with us on our trek to Texas. I was not about to spend money getting paperwork on an animal that was intended for food. So, he got processed earlier than expected. I came home from work late Wednesday night and got to work.
He was full of fat, had a deep red liver, and had no liver cysts of any kind. The kidneys were well rounded and smooth and had no stones (something that can be a problem with male goats on alfalfa). And there were no visible parasites in his stomach or intestine.
This buckling was born here, raised here, and eaten here. Our oldest delivered him herself in the early spring.
He was brined for 12 hours in the fridge. I applied a dry rub (secret recipe).
Smoked for 5 hours between 220 and 250 degrees
Basted repeatedly with my own mixture of Sailor Jerry's, apple juice, and maple syrup.
He was absolutely divine.

I've been putting this off for a couple of weeks. I'm sorry that we've been absent, but it's with good reason.
We have decided that we are moving out of state and will begin settling into the Palestine/Athens area of Texas in August. The farm will be for sale and we are moving onto bigger things.
We have made many friendships and hope that you will continue to follow our journey. If not, that's OK too.
I have about 60 grow outs that need to be done. So, we are still planning a processing class before we leave. Some of the kits could be sold as breeders if you need some rabbits, but all of my proven stock is sold or spoken for already. We are selling the duck flock, also. We are pretty much selling everything. If you need something, let me know. We might have it. ♥️♥️
