Introducing our July Food of the Month!

Cochinita pibil is a traditional Mexican dish of slow roasted pork from the Yucatán Peninsula with roots in ancient Maya cuisine. The word pibil comes from the Mayan word pib, meaning “buried or cooked underground.”

Originally, the Maya marinated wild game in citrus juices & achiote, then slow cooked it in an underground pit lined with hot stones & wrapped in banana leaves. At Mi Dia this classic is reimagined with a tender pork shank, slow cooked with achiote in banana leaves and served with pickled onions, roasted habanero salsa, Oaxacan black beans, and organic blue corn tortillas.
