I’m telling you right now… this one isn’t going to last.

This is, by far, the most expensive batch of pudding we’ve ever made. After one bite, you’ll understand exactly why.

Teddy took our signature pudding recipe and transformed it into a Door County Cherry Cheesecake Pudding, made with real Door County Montmorency cherries and Biscoff cookies. It’s rich, creamy, packed with cherries, and flat-out unbelievable.

We’re serving it refrigerated or frozen, and the feedback so far has been absolutely insane.

We made ONE batch, and once it’s gone, it’s gone. We don’t know if, or when, we’ll make it again.

If you’ve been waiting for the next pudding drop… this is the one.

We'll be OPEN, slinging some absolute bangers. We've got a couple of killer specials hitting the menu this week through the 4th, and if everything comes together the way we're hoping, we're dropping a VERY limited pudding that just might feature some fresh Door County cherries. 🍒

One thing I haven’t talked about enough lately is just how damn proud I am of the team we’ve built here at High Kaliber Craft Kitchen.

It’s not easy to step back from something you’ve poured everything into and look at it from the outside, but over the last few weeks that’s exactly what I’ve been able to do. The feedback I’ve been getting from all of you has been incredible, and it speaks volumes about the people showing up every day and busting their asses to make this place what it is.

That being said, I want to encourage all of you to keep giving us feedback. If something slips, tell us. If we miss the mark, tell us. We aren’t perfect, and I can promise you we’re going to have our share of slip-ups. There will be longer ticket times when we get slammed. There will be days where we’re learning as we go.

But one thing I can promise is that we are absolutely locked in on QUALITY. We’d rather take a little longer and serve something we’re proud of than rush food out the door just to move tickets.

So please continue supporting this team as they grow alongside this crazy little barbecue dream. They care more than you know, and they deserve a ton of credit for what they’ve accomplished.

And to Green Bay… thank you. The support you’ve shown us since opening has been absolutely unreal. It’s been one hell of a roller coaster, and we couldn’t do any of this without you.

🔥 ALRIGHT, WE HEARD YOU. 🔥

We've been a little light on the specials lately, so Teddy and the crew decided it was time to fix that.

FRIDAY AND SATURDAY, we're rolling out TWO specials that have absolutely no business being as good as they are.

1️⃣ Wisconsin Brat Mac Bowl, A Wisconsin brat that gets the full treatment, Boiled. Smoked. Then flash-fried in beef tallow, sliced on the bias, and piled on top of our smoked mac & cheese, cowboy corn, and sauerkraut, then finished with a drizzle of Carolina sauce.

It's smoky, crunchy, creamy, tangy, and unapologetically Wisconsin.

2️⃣ The Loaded Spud
We start with a fresh Idaho potato that's smoked until tender, split open, and mashed with butter and our brisket rub.

Then we load it up with:
Chopped Brisket, Brisket Beans, Bacon Jam, Smoked Cheese Sauce, Pickled Onions, and EVERYTHING sauce.

These will be available FRIDAY AND SATURDAY NIGHT ONLY until we run out.

And judging by how many samples disappeared in the kitchen... they might not last long.

One thing we’ve heard over and over since opening is:

“Can you guys do online ordering?”
“Can I call ahead?”
“Can I order before I leave work?”

Trust me, it did not go unheard.

Over the last few weeks, we’ve been building out an entire online ordering system for High Kaliber Craft Kitchen, and I’m happy to say it’s officially done.

Today we’re running some final testing, making sure everything talks to the POS correctly, orders print where they’re supposed to, and we don’t accidentally sell 47 brisket sandwiches after we’re sold out. 😅

Assuming everything checks out, we’ll be launching online ordering either later today or tomorrow.

This should make it easier for those of you on a lunch break, heading home from work, or simply wanting to make sure your food is waiting for you when you arrive.

As always, we appreciate the feedback and suggestions. A lot of the things we’ve implemented since opening have come directly from conversations with you guys.

🚨 SUNDAY BBQ FIX 🚨

Teddy will be holding down the fort at the ol’ Craft Kitchen this Sunday from 11AM–4PM or until sold out, regular BBQ menu, and likely coming up with some weird, delicious concoction that wasn’t on the menu five minutes earlier.

So if you’re looking for an excuse to get out of the house, grab some lunch, stop in and see us.
