This three bean salad is going to be your new favorite week day meal prep! I find myself whipping this up on a Monday and popping into my fridge every chance I get throughout the week to take a bite. It’s so easy, and BEYOND delicious. It actually tastes better and better throughout the week as the beans soak up the vinaigrette! Just toss together some kidney beans, pinto beans, and edamame and drizzle with your favorite vinaigrette. My recipe is below: 2 Parts Olive Oil 1 Part Lime Juice Dijon Mustard Salt & Pepper to taste
