✨ Homemade Granola Recipe

**Ingredients**
• 3 cups rolled oats (5-minute oats)
• ½ cup mixed nuts, roughly chopped
• ½ cup pumpkin seeds
• ½ cup unsweetened shredded coconut
• 115 g butter, melted
• ¼ cup sunflower oil (or any neutral oil)
• ¼ cup maple syrup
• Honey, to taste
• ½ tsp vanilla extract
• ½ tsp ground cinnamon
• A pinch of salt

**Method**

1. In a large bowl, combine the oats, mixed nuts, pumpkin seeds, shredded coconut, cinnamon, and a pinch of salt.
2. In a separate bowl, whisk together the melted butter, sunflower oil, maple syrup, vanilla extract, and honey.
3. Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated.
4. Spread the mixture onto a lined baking tray, pressing it into an even layer.
5. Bake for 20 minutes, then continue baking in 15-minute intervals until the granola is beautifully golden brown, checking after each interval to prevent over-browning.
6. Allow the granola to cool completely before breaking it into pieces and storing it in an airtight container.
