The Whiskey Sour is a classic for a reason. The balance of sweet and tangy coupled with your whiskey of choice has stood the test of time and is now enjoyed by those aging imbibers as well as the 20 somethings of today. Today I “Spiced” things up with some smoke and heat by introducing a Lapsang Souchong (AKA “Smoke Tea”) syrup to the recipe and some super spicy Bitters. The “bitters” can be as simple as soaking a variety of hot peppers in grain alcohol for a few weeks, you only need a few drops to amp things up. The tea syrup recipe is below.

SMOKE TEA SYRUP
¼ cup of fresh smoke tea
2 cups of water
¾ cup of Brown Sugar
Boil water, remove from heat and add tea leaves. Let Soak for about 20 minutes and strain. Stir in sugar until it dissolves.

Brimstone Sour
2 oz Whiskey of Choice (Kinsey)
¾ oz Lemon
1 oz Smoke Tea syrup
4 dashes Brimstone Bitters
Garnish with Lemon wheel and Cherry

Winter wants me to enjoy Whiskey and dark beers. So I got a little weird and tried to combine the two. Who knew a stout could jive so well in a cocktail ? Me....thats who...bwhahaha 🤣
Any who, here in PA we have lots of options as far as local stouts to work with so I opted for one of my favorites, Lancaster Brewing Company's Milk Stout. Yum. Basically use the beer as a float atop of the cocktail not to dilute the texture and your all set.

2 oz Bourbon
1 oz dark Creme de Cacao
1/2 oz brown sugar syrup
Muddled Mint
Topped with LBC Milk Stout
Garnish with Mint leaf

The "In a pickle" cocktail was a personal milestone for me. I wanted a pickle flavored cocktail without introducing actual pickle brine. Had to R&D this for weeks with hot garbage results, i just couldn't get the ingredients to line up. Eventually the hard work paid off and this little gem was born. The missing piece was the "Garden" bitters which added a sweet, herbal tang made from pickling spice and garlic.

In a Pickle
2 oz BlueCoat Gin,
4 Cucumber slices (muddled)
3 Dill Sprigs (muddled)
¼ oz Lime,
¾ oz Ginger Syrup,
3 dashes Sweet Garden Bitters

I'm starting the Autumn season off with a delicous whiskey apple cocktail. You can whip this up on the rocks or up, but for this video we're going classy, martini style. Don't forget to really muddle those apples, get as much juice as you can. CHEERS !

Muddle Apple slices
2 oz Irish Whiskey
1 oz Laird Applejack
1/2 oz lemon juice
3/4 oz Brown sugar honey syrup
Top with Ginger Ale (Canada Dry or something local)
