1 lb ground beef
1 taco seasoning packet
Β½ tablespoon avocado oil or beef tallow
5 6” tortilla shells

Optional Toppings:
cheddar cheese, shredded or sliced
onion, diced
lettuce, chopped
tomato, chopped
sour cream
fresh cilantro, chopped

In a medium bowl mix the ground beef with the taco seasoning. Using your hands, measure out 5 even portions of the meat mixture.

Press a portion of the meat mixture onto a tortilla shell making sure to cover the entire tortilla. Using your fingertips indent the center of the meat patty. This will prevent the meat from shrinking too much while it cooks.

Drizzle avocado or tallow in a skillet over medium-high heat. Place the burger and tortilla burger side down on the hot skillet. Cook for 3-4 minutes or until the burger crisps up on the edges. Flip the burgers over and immediately top with cheese and cook for another 2-3 minutes. Remove the smashed burgers from the skillet and top with onion, lettuce, tomato, sour cream and fresh cilantro.

Serve warm.

Mediterranean Meatballs with Tzatziki Sauce Recipe

For the meatballs:
1 lb ground beef
ΒΌ cup almond flour
ΒΌ cup crumbled feta cheese
2 tablespoons sundried tomatoes, chopped fine
1 egg
1 tsp dried oregano
1 tsp dried basil
2 cloves garlic, minced
Salt and pepper to taste

For the Tzatziki Sauce:
1 small English cucumber, grated
1 cup plain Greek yogurt
1 clove garlic, minced
1 tablespoon fresh lemon zest
1 tablespoon fresh lemon juice
Β½ tablespoon olive oil
1 tablespoon fresh chopped dill

In a small bowl, mix all the Tzatziki Sauce ingredients until well combined. Cover bowl and allow to the sauce to chill in the refrigerator while you prepare the meatballs.

In a medium sized bowl, mix all the meatball ingredients until well combined. Form the meatballs by measuring out 1/3 cup of the meat mixture and rolling it in between your palms to form a ball. Place the meatball on a baking sheet lined with parchment paper. Repeat with the remaining meat mixture.

Place the meatballs in a preheated oven set at 375 degrees. Cook meatballs until browned and a meat thermometer reads 135 degrees. About 15-20 minutes. Remove the meatballs from the oven and allow to cool.

Serve meatballs with the Tzatziki Sauce, fresh tomato, cucumber, kalamata olives and pita bread.
