Recipe of the week: Rosemary Chicken

Easy to make. Preheat oven to 350 degrees. Line your baking pan with foil (easy clean up) Place your favorite chicken pieces onto the sheet spaced about 1 inch +/- apart. I use thighs and breasts. Place small potatoes around the chicken, the one or two purple onions (sliced into rings on top and around the chicken and potatoes. Season with salt and pepper ( I like montreal chicken or steak seasoning) Place the rosemary sprigs on top of the chicken and potatoes. Cover with foil and cook for 1 to 1 1/2 hours. Uncover (don't worry if the chicken is not all the way cooked) take off the Rosemary Sprigs and broil until golden brown. It's a meal all in one.
