Baked Cornish Hen
INGREDIENTS
2 Cornish hens
Olive oil
McCormick Roasted Garlic & Herb seasoning
Chicken broth
1 lbs baby carrots
1 lbs baby potatoes - halved
6 ribs of celery - chopped
DIRECTIONS
Preheat oven to 350
To a large bowl add your veggies
Drizzle with Olive oil
Sprinkle 2 tbs of seasoning over veggies
Pour your veggies onto a foil lined baking pan
Bake for 30 minutes
Spatchcock your hens
Sprinkle your seasoning over all side of the hen
Place a wire rack over your veggies
Place your hens the rack
Pour about 1 cup of chicken broth to the pan
Roast the hens for 45-60 minutes
Once hen hits 165 internal remove from the oven
Let rest for 5 minutes

Sausage Creole
INGREDIENTS
1 lb sausage – cut in ½ slices
½ cup onion - diced
½ cup bell pepper - diced
½ cup celery – diced
2 garlic cloves – minced
1 can 8 oz tomato sauce
1 can 14 oz diced tomatoes
1 tbs oil
1 tbs Worcestershire sauce
1 tbs hot sauce
1 tsp chili powder
1 bay leaf
DIRECTIONS
Heat Dutch oven over med heat
Add sausage and brown on all sides
Once brown remove and set to the side
Add your oil if needed and let heat up
Add onion, bell pepper and celery
Statue for about 5-7 minutes till soft
Add garlic and cook for 1 minute
Add sausage and remaining ingredients
Stir to combine
Season with salt and pepper if needed
Cover and simmer for 30 minutes
Remove bay leaf before serving
Serve over rice
