Local Raisin Bakes

Inspired by Nowruz, the Persian new year, a little 6 inch cacao olive oil buckwheat cake, a rose water soak, date whipped cream icing, and decorated with pomegranate gems !

Was doing trial and error to create a gluten free option, and this buckwheat olive oil cake is IT ! I made this one refined sugar free as well and it’s ALSO vegan :) Sweetened the cake with apple sauce and the whipped cream using date syrup. This cake now offered as a gf vegan option on my minimart topped with whipped cream and seasonal fruit ! Refined sugar free optional :)
