Chia seed pudding and Greek yogurt make a great combination for a delicious and nutritious low carb snack! Chia seeds are loaded with fiber and protein, making them an ideal snack for if you are looking to reduce your carb intake. Greek yogurt is also a good source of protein and calcium, and it adds an extra creamy texture to the pudding. The combination of the two ingredients creates a filling yet light snack that can be enjoyed any time of day.

To make this chia seed pudding, simply soak 1 Tbs of chia seeds in 1/4 cup of coconut milk mixed with some blueberries and erythritol then leave in the fridge for at least 4 hours . Once its thick, add in your Greek yoghurt (this is homemade) and the mixed berries as your low carb toppings.

This chia seed pudding is simple to make and can easily be customized to suit your individual taste preferences. Enjoy it as a snack or as part of a meal – either way, you’ll get a delicious dose of healthy fats, fiber, and protein. Enjoy!
