BEEF & BEAN BAKED TOSTADAS! Follow @kalejunkie for more easy recipes! This is such a yummy meal and it comes together QUICKLY—and no need to fry your tortillas, did you know you can bake them and they will turn out super crunchy? If you don’t eat/like beef, substitute the protein for anything you like, including plant-based crumbles. Make this your OWN!⁣

Makes 8 loaded tostadas⁣
8 corn tortillas⁣
1 yellow onion⁣
1 head romaine lettuce, chopped (about 2 cups)⁣
1 cup cotija cheese, crumbled or grated⁣
1 tsp olive oil⁣
1 lb lean ground beef (I used 95/5)⁣
3 tb taco seasoning⁣
1 can refried beans (I used @sietefoods)⁣
Salsa of choice⁣
⁣
Preheat oven to 400. Line up corn tortillas on the baking sheet—it is ok if a few of them overlap. Spray both sides lightly with spray of choice. Place another baking sheet on top to keep them flat when baking. Bake for 13-14 minutes. Gently remove the top baking sheet and you will have crispy tortilla shells. Sprinkle with salt and set aside. Next, chop onion, lettuce and crumble/grate cheese. In a skillet over medium heat, add the oil. Once the oil is hot, add the onions and sauté for about 5 minutes until the onions start to soften. Add the beef and taco seasoning and continue to stir and cook until the meat has fully browned and is cooked through. Remove from heat. Warm refried beans in a small pot on the stove or in the microwave. Assemble tostadas, starting with the beans, then meat, lettuce, cheese, salsa of choice and a little more cheese for good measure. Enjoy!⁣
