Bean-less Chili
Ingredients:
β’ 1 lb. ground lean beef or ground turkey
β’ 1 chopped pepper
β’ 1 C sliced mushrooms
β’ 2 stalks of celery chopped
β’ Β½ onion chopped
β’ 1 zucchini sliced
β’ 2 large cans of diced tomatoes
β’ Β½ C beef broth
β’ 1 tbsp chili powder
β’ 1 tbsp cumin
β’ 1 tbsp oregano
β’ 1 tsp garlic powder or 1-2 fresh garlic cloves
β’ salt & pepper (spices are to taste. I usually use more of all of the above)
β’ Optional: Add any other veggies youβd like to try - zucchini squash, cauliflower, broccoli, etc.
Directions:
Brown the meat, add veggies and Β½ C beef broth to sautΓ© until soft. Add tomatoes. Add seasonings. Simmer for about 30 minutes or prep in a crock pot.
