I couldn’t wait till the first zucchini blossoms come to my local farmers market. And here they are. The first recipe of the season are these gorgeous Zucchini blossom crepes.
Look like pure piece of art and are easy to make.
For 10 pancakes 🥞
- 2 eggs
- A pinch of salt
- 1 cup or 200ml of milk (or water)
- 3/4 cup or 100g of flour
- 1tbsp of olive oil
- 10 squash, zucchini or pumpkin blossoms
Mix all together and leave for 15 minutes. Prepare the blossoms by cutting the end, opening them up and flattening.
Pour the batter onto a nicely preheated pan, but cook on low. Place the flower on top, flip once the crepe looks cooked but not golden. Stuff with cheese and ham or serve as is.
