HOMEMADE DOUBLE CHICKEN RICE PLATE

Ingredients:

* 2 lbs boneless chicken thighs, divided
* 3 cups cooked rice
* 2 tbsp oil
* 1 tbsp butter
* 1 small onion, diced
* 2 garlic cloves, minced
* 2 green onions, sliced
* 1 tsp garlic powder
* 1 tsp onion powder
* 1/2 tsp paprika
* 1/2 tsp black pepper
* Salt, to taste
* 1/3 cup soy sauce, 1/4 cup brown sugar, 2 tbsp honey
* 2 tbsp ketchup, 1 tbsp apple juice or broth
* 1 tbsp cornstarch + 2 tbsp water

Directions:

1. Divide the chicken into two batches. Season one batch with soy sauce, oil, garlic powder, and pepper, and season the other with garlic powder, onion powder, paprika, salt, and pepper.
2. Cook the grilled chicken in a hot skillet until browned and cooked through, then set aside.
3. Cook the second batch until golden, then add soy sauce, brown sugar, honey, ketchup, and apple juice. Stir in the cornstarch slurry and simmer until thick and glossy.
4. In another pan, melt butter and cook onion and garlic for 1 to 2 minutes, then toss in the rice until hot and fluffy.
5. Serve the rice with the glazed chicken on one side and the grilled chicken on the other, then top with green onions.
