Recently I had the pleasure of hosting a private cooking class for Lori and her family—11 people learning how to make fresh pasta from scratch, Cacio e Pepe, and tiramisu together.

There was flour everywhere, lots of laughs, and of course incredible food at the end.

🔥 How I Cook a Perfect Wagyu Ribeye — Chef Capaldi Style 🔥

When you’re working with beautiful Wagyu, the goal is simple: respect the meat and let the flavor speak for itself.

Here’s my process 👇🏼

🥩 Season
Just salt + pepper. Nothing else. Wagyu doesn’t need help — it needs balance.

🧈 Vacuum-Seal
I seal it with a touch of butter. This keeps the meat incredibly tender and lets it slowly absorb that richness.

♨️ Sous Vide
Cooked low and slow to the exact temperature I want. No guesswork. No stress. Just perfect edge-to-edge doneness.

🔥 High-Heat Sear
Last step: super hot pan + neutral oil. Quick, intense sear to create that crust while keeping the center buttery and juicy.

✨ Result: A melt-in-your-mouth Wagyu ribeye with a crisp exterior and unbelievable flavor.

🥥 No-Bake Energy Bites
Healthy. Quick. Kid-approved. Chef Capaldi style. 💪✨

These little bites are loaded with goodness — oats, coconut, flaxseed, and a hint of chocolate — the perfect healthy snack for both adults and little ones. No baking, no fuss, just roll and chill.

👨‍🍳 Recipe:
• 1 cup old-fashioned oats
• ⅔ cup toasted shredded coconut (sweetened or unsweetened)
• ½ cup creamy peanut butter
• ½ cup ground flaxseed
• ½ cup semisweet (or vegan) chocolate chips
• ⅓ cup honey
• 1 tbsp chia seeds (optional)
• 1 tsp vanilla extract

Instructions:
1️⃣ Mix all ingredients together in a bowl until fully combined.
2️⃣ Chill the mixture for about 15–20 minutes.
3️⃣ Roll into bite-size balls and store in the fridge for up to 1 week (or freeze longer).

💡 Chef’s Tip: Add a pinch of sea salt or drizzle with dark chocolate for a gourmet touch.
