Chimborazo

Seventeen years ago, we opened Chimborazo on the corner of 29th and Central Avenue in Northeast Minneapolis, carrying recipes from home and a hope that food could create connection. What started as a family dream grew because this neighborhood welcomed us, supported us, and made room for us.

Two years ago, we brought that same spirit to 508 Lexington Parkway in St. Paul, inside the Trader Joe’s complex—another table, another chance to gather, another community to be part of.

Chimborazo has always been about more than food. It’s about where we come from, what we’ve endured, and how we care for one another. It’s about sitting close, listening, and finding comfort in something warm when the world feels heavy.

And right now, it does feel heavy. There is fear, grief, and uncertainty around us. But we also see generosity. We see neighbors showing up. We see people choosing kindness, even when it’s hard.

Our restaurants remain places of welcome—where you can slow down, be nourished, and feel held by community, even briefly. Sharing a meal has always been our way of saying: you are not alone.
