This family of mine, I just can’t believe it sometimes. The kids are so little and so big at the same time. I constantly tuck away tiny snippets of this tender time in my heart, hoping that when I’m old and they are out in the world these memories are as vivid as they were on the day they were made.

Food prep tip!
Cook a whole bunch of chicken breasts (this is 3 lbs). Cut into chunks and throw it in the standing mixer on medium speed until it is shredded. Use in recipes throughout the week or freeze!

7 minute cooked spaghetti squash and 15 minute frozen to shredded chicken breast in the instantpot. I made a peanuty-Thai sauce (peanut butter, coconut aminos, coconut milk, crushed red pepper, sesame oil, olive oil, garlic and salt) and served with raw shredded carrots and raw pepper slices. Bonus: no food coma from the noodles. Instant pot, I love you.
