🍯The honey process is a unique method of coffee bean processing where the outer skin of the coffee cherry is removed, but some or all of the mucilage (a sticky substance surrounding the bean) is left intact during drying.
This mucilage is reminiscent of honey in texture and appearance, hence the name “honey process.” As the beans dry with the mucilage still attached, they absorb some of its sugars, resulting in a sweeter, fruitier flavor profile compared to other processing methods.
Honey process coffees often exhibit a range of flavors, from floral and fruity to caramel and chocolate notes.

The “color” of honey is just referring to the amount of mucilage left on the bean after being washed. Red and Black honey will have more mucilage than a white or yellow.
