Learning the complexities of the different ‘crumbs’ of sourdough is a level of nerd I didn’t see myself getting to. But here we are 🤍 A correctly proofed sourdough loaf can have a few different types of crumb. Crumb is the pattern and size of the holes you see in the bread. This one is a tight crumb. The air bubbles are closer together vs a wide crumb (bigger air bubbles spaced wider apart) but still developed properly in the fermentation process. And tastes delish 🤌🏼
