Ingredients
1 lb ground beef (or mix beef and pork)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
1/4 cup milk
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1 cup mozzarella cheese, cubed
1/2 cup shredded cheddar cheese
1/3 cup ketchup
1 tbsp brown sugar
1 tsp Worcestershire sauce
Fresh parsley, chopped
Instructions
Preheat the oven to 375°F and lightly grease a baking dish or sheet pan with nonstick spray.
In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, and milk.
Add the garlic powder, onion powder, salt, and black pepper, mixing until everything is fully combined.
Scoop small portions of the meat mixture and flatten each one gently in your hands.
Place a cube of mozzarella cheese into the center of each portion and carefully seal the meat around it.
Arrange the stuffed meatloaf bites evenly in the prepared baking dish, leaving a little space between each one.
In a small bowl, stir together the ketchup, brown sugar, and Worcestershire sauce until smooth.
Brush the glaze generously over the tops of the meatloaf bites before baking.
Bake for 20 to 25 minutes or until the meat is cooked through and nicely browned on the outside.
Sprinkle the shredded cheddar cheese over the top during the last few minutes of baking.
Remove from the oven and allow the meatloaf bites to rest slightly before serving.
Garnish with fresh parsley and serve warm while the cheese stays melted and gooey inside.
