Lost margin almost never leaves in one big, obvious number. It leaves in fifty small ones nobody flagged.
If a key ingredient doubled overnight, you'd catch it. Someone would shout. You'd renegotiate or re-spec by the end of the week. Big moves trigger attention, and attention triggers action.
What actually erodes a kitchen is the opposite. It's the dollar-twenty here, the two percent there, the case that quietly went from $38 to $41 over three deliveries.
