Try this Baked Lemon Garlic Salmon with Veggies β protein-packed, full of flavor, and ready in just 30 minutes! Perfect for busy weeknights.
π Ingredients (4 servings):
4 salmon fillets
2 tbsp olive oil
3 garlic cloves (minced)
Juice of 2 lemons + slices for garnish
1 tsp oregano
Salt & black pepper
1 cup broccoli florets
1 red bell pepper (sliced)
1 zucchini (sliced)
Fresh parsley

1οΈβ£ Preheat oven to 400Β°F (200Β°C).
2οΈβ£ Place salmon on a sheet, drizzle olive oil, garlic, lemon juice, and season.

This Mediterranean Quinoa Salad is refreshing, protein-packed, and ready in just 20 minutes!
π Ingredients (4 servings):
1 cup quinoa (cooked in 2 cups water or broth)
1 cucumber, diced
1 cup cherry tomatoes, halved
Β½ red onion, chopped
Β½ cup Kalamata olives, sliced
Β½ cup feta cheese, crumbled
2 tbsp olive oil + juice of 1 lemon
Salt, pepper & oregano to taste
