This is so good and easy to make. I added a few things so reposting with the additions so I remember next time:
SOS (aka Creamed Beef)
recipe
5 tbsp of butter
3 tbsp bacon grease
1/3 cup of all purpose flour
3 cups of warm milk
2 tsp pepper (more of desired)
8 ozs Buddig sliced beef or dried beef (I did both, 4ozs of each, I like the saltiness of the dried beef)
In a medium saucepan over low heat, melt butter and bacon grease. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Add pepper. Bring to a boil and stir in beef.
Serve over artisan bread or Texas toast, toasted.

Stewed Potatoes (not potato soup)
If you were raised in the South, you grew up eating stewed potatoes at least a couple of times a month, if not every week. Served with cornbread and blackeyed peas, stewed potatoes were a real treat from any proper old Southerner's childhood.
Ingredients
6-8 large potatoes (peeled and cubed, about 1-inch cubes)
salt and pepper
2 tablespoons bacon grease (optional)
1 pinch onion flakes
2 tablespoons flour
½ cup water
½ cup milk
3 tablespoons butter
Instructions
Peel and cube the potatoes, put in a medium pot and fill with water until it's about 2 inches above potatoes.
Bring to a boil (you want the potatoes cooked so they are just fork tender, not falling apart).
After the potatoes are done, keep them in the same water you cooked them in and reduce to a low heat.
Put the flour and half cup of water in a bowl and blend with a whisk until the flour is dissolved.
Stirring constantly, but carefully, add the dissolved flour and water into the pot with the potatoes and water. Allow a few minutes to cook on simmer so that it can thicken.
Add more flour if you want it thicker, or more water if you want it thinner.
Add milk, salt, pepper, onion flakes and butter or bacon grease (if desired - it's fine without the bacon grease). Season to taste.

Easy Chicken Tetrazzini
Shredded cooked chicken, about 4-5 boneless chicken breasts
1can cream of celery soup
1can of cream of chicken soup
1 lb spaghetti or fettuccine, I like the fettuccini
1 onion chopped
2-3 cups shredded cheddar cheese
1 1/2 cups chicken broth
1 scant teaspoon minced garlic
1/2 stick of butter
Salt and pepper to taste
Bring to a boil and simmer chicken breast till tender and shredded for the casserole
Boil pasta according to directions, make sure not to get it too soft, it needs to be alittle firm to finish in the oven
Sauté onion and garlic in butter
Mix both cans of soup in a bowl, in diluted,no water
Spray a 9x13 with Pam and begin layering using some of the pasta first
Then a layer of chicken, then onion mix, some cheese, and then layering the soup over it. I use 9-12 tablespoons of soup in a layer, spreading it over all.
Repeat layers till your ingredients are gone, topping with cheese
Pour the 1 to 1-1/2 cups of chicken broth over the top
Bake, covering with foil, at 375 degrees for approx. 35-45 minutes, until heated through and bubbly.
Uncover and cook 10 more mins to brown alittle.
