Caroleβs homemade pesto:
- 3 oz fresh basil
- 2 cloves garlic
- 1/3 cup toasted pine nuts
- EVOO
- Parmesan
- Salt & pepper
Blend all ingredients in a food processor or blender. Toss with your favorite pasta πΏπ enjoy!

Veggie packed ππΌπ

this dish is made with a delicious, veggie filled pasta from ! It is high in protein, gluten free, and has a full serving of veggies in every serving! I elevated this dish by added even more of my favorite veggies π
Ingredients:
- veggie pasta
- Your favorite veggies + sauce. I used zucchini, green onion, and chickpeas.
Directions:
- Cook pasta according to box instructions.
- In a separate pan, cook your fav veggies in your pasta sauce.
- Combine pasta + veggies / sauce. I served mine with a simple side salad consisting of mixed greens, cucumber, and tomato. Dressing is just EVOO, lemon, salt, and pepper. Enjoy!

An everything but the kitchen sink type of meal π€πΌ perfect for using up all your extra produce before leaving for a trip! I love cooking up all the veggies I have on hand and tossing them in my fav sauce. Serve over a bed of greens and you have yourself a delicious meal ππ₯¬π
