Say kaixo to the new kid on the block, Txerri Basque Cider. Ion (as depicted) used a special high acidity apple blend and macerated post fermentation with a ton of Navarra cherries for 90 days. Tart and earthy as a basque cider should be.. but with cherries!
Oh, and Txerri happens to mean “pig” in basque.

We are so excited to host Jon from next week in NYC! His txakolis are unique in DO Getariako showing a serious, terroir-driven side of Hondarrabi Zuri with still bottlings that are more reminiscent of Chablis than the typical vhino verde-like style we are familiar with.
The estate sits less than a kilometer inland from the famous Zumaia Flysch (third and fourth picture) with its impressive striated compacted clay formations. Tens of millions of years ago, this rock pushed inland dragging salt and other elements from the sea with it. Today, it sits a mere 60cm below the surface of the vineyard, imparting intense minerality and concentration.
