Golden, crisp, and folded with intention.
Pâté kòde—literally “twisted patties”—gets its name from the hand-crimped edge that seals each piece before it hits the oil. But beyond the technique, it tells a deeper story. Rooted in a blend of French colonial influence and West African cooking traditions, this humble pastry evolved into a staple of Haitian life by the early 20th century.
Wrapped in paper, passed hand to hand, it’s the kind of food that lives in memory—after school snacks, quick meals between work, street corners filled with flavor. Whether filled with smoked herring, beef, or chicken, it’s always been about accessibility, community, and satisfaction.
And like many Haitian traditions, it traveled—finding new homes across the diaspora from Brooklyn to Miami, still holding the same warmth.
This Haitian Flag Day, we’re bringing that feeling to Short Stay.
