In my effort to eat more nose to tail, today's cooking experiment I made gluten free Beef, Sausage and Beef Heart Meatballs. They taste amazing! To keep them gluten free I used ground organic sprouted oats as my binder with lots of Parmesan cheese.

This holiday season will be one we will most likely never forget. A year filled with stress, lack of work and heartbreak for many, but I am reminded to stay grateful for what I already have, my family may be far away but we are all still here and that's the most that I could ask for this year. We have learned how to adjust to what is, move forward and try to do our best keep each other safe. I have hope for 2021 but I will continue to tread lightly. Wishing you all a holiday season that holds hope in your hearts.
