Finally, I told John I would make a Spanish "𝐓𝐨𝐫𝐭𝐢𝐥𝐥𝐚 𝐝𝐞 𝐏𝐚𝐭𝐚𝐭𝐚𝐬", which is a famous potato omelette. We Argentinians inherited this signature dish from Spain and it's eaten everywhere in the country! It's so delicious but a real challenge to turn the tortilla over in the pan and NOT break it! This one was made with my friend Heidi's delicious eggs from her home-raised hens! :) She sells them for $5 a dozen if you want to reach out to her... 🥔🥚🧅🇪🇸

Thank you, Heidi, for the delicious eggs you gifted me last week! I love the bright yellow, almost orange, color of the yolks. It takes a lot of work to raise your own chickens but it definitely pays off! ❤

There is a "national day" for everything and it was 𝐍𝐚𝐭𝐢𝐨𝐧𝐚𝐥 𝐃𝐚𝐲 𝐨𝐟 𝐌𝐮𝐬𝐡𝐫𝐨𝐨𝐦! This delicious food brought childhood memories of my mother packing the car with all of us 6 kids and going out after the rain to pick up mushrooms under the pine trees. Then we all helpers followed her ritual of slicing them, drying them in the sun, and storing them in jars. My Mom would use them in a multiple of delectable recipes :) She KNEW the health benefits too.
