Finally - to everyone who requested the recipe/ingredients.
spaghetti squash with spinach/artichoke dip.
True to form- i took this and lightened it up and uppppped the protein.

12g fats
43g carbs
38g protein
(3 servings)
ingredients
spaghetti squash
1/2 vidalia onion
3 garlic - minced
1 can artichokes - chopped
1 container baby spinach
1 1/2 cup baby bella mushrooms- chopped
3/4 LF cottage cheese - blended smooth
1.5 teaspoon Better than Boullion- roasted garlic (blended with cottage cheese)
4-6 T fresh grated parmesan
1/4 cup or more to your liking- mozzarella to top
400 degree oven -Roast the squash - split- remove seeds, brush with eevo- season with S&P- split side down. use a fork to shred the inside of the squash - leave in the shells.
Cook chicken italian sausage or whatever protein. Add in onions, mushrooms, garlic -add in spinach - wilt. add i. chopped artichokes. Season. Add in blended cottage cheese and parmesan-mix well.
Split the mixture evenly between squash - toss/mix - reload into shell. EAT as is or top with more cheese and bake til melted.
